A vegan version of my mom's favorite holiday breakfast.Ingredients | Vegan Banh Mi Recipe2 cups rolled oats1 ½ (14 ounce) cans coconut milk, or more to taste3 tablespoons chia seeds2 Granny Smith apples, peeled and grated½ lemon, juiced2 cups sliced strawberries1 cup blueberries2 tablespoons maple syrup, or to tasteDirectionsMix oats, coconut milk, and chia seeds together in a bowl.Toss apples and lemon juice together in a bowl until coated; fold into oat mixture. Stir strawberries, blueberries, and maple syrup into oat mixture.
